Thyme honey
Puri New Zealand’s thyme honey (thymus vulgaris) is harvested in the magnificent Central Otago region of New Zealand’s South Island. Thyme was introduced by the Frenchman Jean Desire Feraud. Around 1860 he settled near Alexandra in the Central Otago region. He grew thyme in his garden and it eventually spread throughout the region. The climatic conditions are ideal, as the region is arid and dry. This makes it the perfect environment for thyme propagation. That’s why, once a year, you can see fields of thyme flowers as far as the eye can see. It’s a feast for the bees! It’s worth noting that during the season when the thyme flowers bloom, there are mainly only thyme flowers around. This makes for an ultra-concentrated, pure honey.
The flavour of this honey is characterised by fruity notes, followed by honey and a warm, spicy finish.
Known for its antibacterial and antiseptic properties, it can be used to heal wounds, burns, shingles, acne, herpes, fungal infections, superficial wounds, etc.

White Clover Honey
Clover honey (trifolium repens), harvested in the Otago region, one of the most southerly regions of New Zealand. It is characterised by large valleys, plains and forested mountain ranges.
In this region, the seasons are very distinct. Winter is harsh and snowy, spring is wet and summer is very hot. The short but intense summer gives rise to very large fields of clover. During this limited harvest period, the bees enjoy foraging in these fields.
Clover honey is lightly fruity and floral. It’s a real honey bonbon. This honey can be enjoyed without moderation, with a strong “come back to it” flavour.
It is energetic, antiviral and antibacterial. It has excellent nutritional value (antioxidants, vitamins B1, B2, B3, C, K, iron, copper, etc.) and improves resistance to physical exertion (very useful for sportspeople). It reduces high blood pressure and is a diuretic, depurative and expectorant.

Manuka honey
The wild Manuka tea tree (Leptospermum Scoparium) grows throughout New Zealand and can vary in appearance depending on the local climate, from a bush to a 10-metre high tree. The flowers, whose nectar bees love, can be white or pinkish, and sometimes even red. This honey is world-famous for its antibacterial properties (methylglyoxal). This is an antibacterial molecule called MGO – Methylglyoxal (or NPA – Non Peroxide Activity).
It has a fragrant, vanilla flavour with a woody, caramelised tea tree finish.

Internally, it is highly antibacterial and antiviral. It treats sore throats, prevents stomach ulcers, improves the digestive and immune systems… Externally, it is very good for treating acne, healing wounds / burns / chronic wounds, fighting infections and inflammation…
